In India, it is used to prepare a traditional sweet called Petha. It is pieces of gourd cooked in sugar syrup and then dried to allow hardening. It is a delicacy in Agra. You need good quality and ripe ash gourd for this recipe.· In South India, it is used in various ways. Use it with dal to make Kootu, or add along with other vegetables in Sambhar, Avial etc.· Use in making winter melon soup, juices or stir fries of your choice.
Soil Nutrient Requirements
Although it can do well in a variety of soil, well-drained, loamy soil is the best. For a bountiful harvest, enrich the soil with organic matter.Optimum pH range from 6.0 to 6.5.
Sowing Method
Ash Gourd plants may seem strenuous to be planted, but they are not. While planting or sowing the seeds, you need to keep a few things in mind.1)Sow the seeds in the soil 1 to 2 cm deep.2)Once the seeds are sown, 2 weeks later, go through unhealthy or ingrown plants. Remove them and retain new ones if needed.3)Once the dried twigs start to appear, let them spread on the ground. Being a vining plant, growing ash gourds will need support. Some people allow it to sprawl on the ground, but it has two disadvantages–Improper air circulation and wastage of space. Plus, it can cause harm to other low growing plants. Providing a support structure, such as a trellis, poles, or stake, nearby the planting site, is advisable.

In 90 to 100 days of sowing, the fruits of the ash gourd are ready to be sown. However, sometimes it may take up to 150 days. It all depends upon the local market. According to the need, there are two types of harvesting – immature and fully matured. In the immature stage, the fruits are harvested in 1 week of anthesis, and in the fully grown step, the fruits are exported once they develop a waxy coating on their surface.
